Chili Crisp Tofu

When the kitchen feels too warm to face and even boiling a pan of water sounds like too much effort, cold silken tofu is exactly the kind of dinner worth remembering.
The tofu is served straight from the fridge, then covered with a sharp, spicy dressing made from soy sauce, chili crisp, rice vinegar, sesame oil, and plenty of scallions.
There is no frying, roasting, or complicated preparation. The entire dish comes together in minutes, but the combination of creamy tofu, crunchy chili oil, acidity, and fresh onion gives it far more personality than its short ingredient list suggests.
What You’ll Need
For 1–2 servings:
1 package chilled silken tofu, 400–450 g
2 scallions, finely chopped
2 tbsp low-sodium soy sauce
1 tbsp chili crisp
1 tbsp unseasoned rice vinegar
1 tsp sugar
1 tsp toasted sesame oil
2 tbsp water
Toasted sesame seeds, optional
Tip: silken tofu is important here. Firmer tofu will still work in a pinch, but You will lose the soft, almost custard-like texture that makes this dish special.
1. Treat the Tofu Gently
Silken tofu is extremely delicate, so the first step is simply getting it onto the plate without breaking it apart.
Drain the package carefully, then turn it onto a shallow bowl or plate with a rim.
Do not worry if a little water remains around it. You can gently pour off the excess just before adding the dressing.
Keeping the block whole makes the dish look more dramatic and also lets You spoon the sauce over the surface as You eat.
2. Build the Dressing
The sauce is where most of the flavour comes from.
Mix soy sauce, chili crisp, rice vinegar, sugar, sesame oil, chopped scallions, and water until the sugar dissolves.
Each ingredient has a specific job.
Soy sauce brings saltiness, chili crisp adds heat and texture, vinegar cuts through the richness, and sesame oil gives the dressing a deeper toasted aroma.
The small amount of sugar softens the sharper edges, while water prevents the dressing from becoming too intense.
Best balance: the sauce should taste spicy and savoury, but still bright enough that it does not overwhelm the tofu.
3. Pour, Don’t Toss
Unlike most salads, this is not something You want to mix aggressively.
Once the tofu is on the plate, simply spoon the dressing over the top and let it run down the sides.
Finish with toasted sesame seeds if You like extra crunch.
As You eat, break off pieces of tofu with a spoon and drag them through the sauce collecting at the bottom of the bowl.
That contrast between cool, soft tofu and the crunchy bits from the chili crisp is what makes the dish so satisfying.
4. Adjust the Heat
Chili crisp varies dramatically from one jar to another.
Some versions are mostly crunchy and aromatic, while others are seriously hot. Start with one tablespoon and taste before adding more.
If You want less heat, increase the vinegar and scallions rather than removing the chili crisp completely. You still want some of its roasted, savoury flavour.
If You prefer something bolder, add more chili crisp or a few drops of chili oil just before serving.
Tip: seasoned rice vinegar can replace unseasoned vinegar, but reduce or skip the sugar because seasoned versions are already sweetened.
5. Turn It Into Dinner
Cold tofu works beautifully on its own, but it can also become part of a larger meal.
Serve it beside chilled soba or udon noodles with thinly sliced cucumber for a refreshing summer dinner.
Steamed rice also works if You want something more filling, while shredded cabbage, cucumber, or radish can add extra crunch.
For a simple lunch, serve the tofu with a bowl of rice and some quickly dressed vegetables.
Easy combination: cold tofu, cucumber, noodles, sesame seeds, and extra scallions creates a complete meal without much cooking at all.
